Manual harvest in boxes
The grapes are sorted at the plot then sorted a second time in the cellar
50% of the grapes are vinified using destemmed grapes, native yeasts, with maceration under marc for 9 months.
The wine is then aged in vats for 10 months.
The other 50% are vinified in whole bunches in carbonic maceration, trampled underfoot.
The wine is aged in oak barrels for 18 months
Bottling without fining or filtration
minimal use of sulphites

Tasting

The color is deep red with purple reflections.
The nose develops notes of black olive tapenade and spices (licorice, cinnamon)
The attack is voluminous followed by a robust and elegant mid-palate as well as very fine tannins.
The finish offers good persistence with notes of mocha and toasted notes.
