Hot pre-fermentation maceration
Control of fermentation temperatures
Maceration for 3 weeks under pomace
Limitation of sulphite additions

Tasting

The color is bright garnet red
The nose is fruity and develops aromas of fleshy cherry and rhubarb.
The attack is fruity, the mid-palate is round and has silky tannins.
The finish is delicious with notes of amaretto cherry and offers good persistence
