Mechanical harvest at night to preserve the aromatic potential.
Gentle destemming and crushing.
Hot pre-fermentation maceration:
Control of fermentation temperatures
Maceration for 3 weeks under pomace.
Aging in vats with oak staves
Limitation of sulphite additions.

Tasting

The color is red with garnet reflections.
The nose develops aromas of slightly truffled undergrowth.
The attack is smooth and delicious, with aromas of red fruits.
The finish is persistent with soft tannins.

Guarding Potential

Four to six years in good storage conditions.
